Cheesy Mashed Potato & Bacon Stuffed Chicken Breasts Recipe


Cheesy Mashed Tater & Bacon Stuffed Chicken Breasts
Sooo one evening while my love was away, I was going through my thousands of recipes and couldn't decide on a single thing to make, so I created these mouthgasmic things instead.

Ingredients:
  • 3 chicken breasts
  • 3 or more strips of bacon (I used turkey bacon because thats all I happened to have at the time)
  • 1 pouch cheesy instant mashed potatoes
  • 2 slices cheese, I used colby-jack
  • 1 egg, beaten
  • 2 cups italian bread crumbs
  • Parmesan cheese, garlic salt, pepper, and whatever else you wish to mix in with the bread crumbs
  • lots of toothpicks!
 Directions:
  1.  Preheat oven to 375.
  2. Prepare mashed potatoes as directed on package.
  3. Cook bacon til yummy and crispy.
  4. Flatten chicken breasts out as much as possible.
  5. Put a spoonful of mashed potatoes in the middle of the chicken breasts, then add bacon on top of the taters (you'll have to break the bacon up into a few pieces).
  6. Roll the chicken breasts up and hold together with toothpicks. *Beware, this gets messy!
  7. Beat egg in shallow dish.
  8. Mix breadcrumbs, parm cheese, and all your yummy spices in another shallow dish. 
  9. Dip the messy yummy chicken in the egg, then bread crumbs, then put them in a greased baking dish.  *Feel free to pat some extra bread crumbs on, its hard to get the crumbs in all the crevices. 
  10. I honestly forgot how long I cooked these for, so just keep an eye on them, cook for about 15 minutes and see how its goin.  
  11. Put slices of cheese on top of each breast for the last 5 minutes of baking, or just until melted.
  12. Serve with whats left of the mashed potatoes.

Garlic Spiced Grilled Cheese Recipe


Garlic Spiced Grilled Cheeeeeseee!
My boyfriend is a huge fan of these.  Sometimes if I wanna mix things up a little, I use some lunchmeat we have in the fridge (chicken or turkey) and cut it up into small pieces, fry in a pan with some BBQ sauce, and put it on top of the cheese... BEST. THING. EVER.

Ingredients:
  • 2 slices of bread
  • butter
  • 1-2 slices Kraft cheese
  • garlic salt
  • McCormicks Perfect Pinch savory all-purpose spice 

Directions:
  1. Butter one side of each slice of bread.
  2. Sprinkle each side with garlic salt and perfect pinch seasoning.
  3. Put a slice of bread butter side down in a small frying pan.
  4. Put slices of cheese on top of the bread, then place the last piece of bread on top, butter side up.
  5. Fry the grilled garlicy goodness til browned on both sides.
  6. Be blown away by the simplest, most gourmet grilled cheese ever.

Spicy Shredded Chicken Pesto Alfredo Recipe


Spicy Shredded Chicken Pesto Alfredo
Ingredients:
  • 1/2 lb noodles
  • 1 lb chicken breasts
  • 1 jar alfredo sauce
  • 2 tbsp butter
  • 1/2 cup italian dressing
  • 2 tbsp and 1 tbsp pesto, divided
  • dash crushed red pepper
  • dash cayenne pepper
  • dash minced garlic
  • dash onion powder
  • dash black pepper
  • 1/4 cup mozzarella cheese per serving
Directions:
  1. Start a pot of water to boil for noodles.  Once boiling, cook and drain noodles as directed on box.
  2. Cut chicken breasts up into smaller pieces (so they cook faster).  
  3. Put chicken pieces, butter, pesto, and italian dressing in a frying pan (I used a wok) and cook on medium heat, flipping chicken pieces occassionally.
  4. Once chicken is cooked completely, shred the chicken with two forks.  Let cook for an additional minute or two so the shredded chicken can absorb some ooey goodness. 
  5. Put alfredo sauce and last tbsp pesto in with chicken, leaving any excess italian dressing mixture in the pan.  Mix well.
  6. Add dash of all the spices in with chicken alfredo and stir. 
  7. Serve alfredo mixture over noodles and top off with 1/4 cup mozzarella cheese per plate.
  8. Um, YUM!

S'mores Mini Cups Recipe


S'mores Mini Cups

I found this AMAZING recipe on Pinterest and instantly fell in love with them.  I decided to tweak it a tit bit by topping them off with sprinkles, because sprinkles make everything look that much more delicious :)

Ingredients:

  • 3 hershey milk chocolate bars
  • 12 large marshmallows
  • 1 cup graham cracker crumbs
  • 1/4 cup powdered sugar
  • 6 tbsp butter, melted
Directions:
  1. Preheat oven to 350.
  2. Combine graham cracker crumbs, powdered sugar, and butter in a small bowl. Place 1 tablespoon of crumb mixture in each cup of a mini cupcake pan. Firmly press crumbs to form shallow cups. Bake 4-5 minutes.
  3. Meanwhile, break two of the candy bars into rectangles. Remove pan from oven; place one rectangle into each cup.
  4. Cut marshmallows in half crosswise.
  5. Place one marshmallow half, cut-side down, into each cup. Return to oven 1-2 minutes or until marshmallows are slightly softened.
  6. Remove pans from oven; cool completely.
  7. Carefully remove cups from pan once cooled.
  8. Break remaining candy bar and place in small microwavable bowl. Microwave for about a minute, stirring every 20 seconds. Dip the top of each marshmallow in melted chocolate. 
  9. Top with sprinkles, or leave plain, whatever the hell you want.
  10. Put S'mores cups in an air tight container and store in fridge until ready to devour!

Cake Mix Cookies Recipe


Cake Mix Cookies

I have made this recipe for such a long time now, its everyone's favorite! I just made this recipe with fourth of July M&M's and sprinkles.  I make special batches for every holiday :)

Ingredients: 
  • 1 box cake mix, whatever kind your heart desires
  • 2 eggs
  • 1/4 cup vegetable oil
  • 6 oz. chocolate chips, M&M's, white chocolate chips or any other mix-in of your choice
Directions:
  1. Preheat oven to 375.
  2. Mix all ingredients together in large mixing bowl until thoroughly mixed.
  3. Grease cookie sheet, and put spoonfuls of cookie dough on cookie sheet about one to two inches apart.
  4. Bake cookies for 10-12 minutes or until edged are slightly browned.  
  5. ENJOY :)

*funfetti cake mix with sprinkles
*white cake mix with chocolate chips or M&M's
*yellow cake mix with Reeses pieces

Breakfast Mac N' Cheese Recipe


Breakfast Mac N' Cheese

Ingredients:
  • 1/2 lb noodles, any shape
  • 1/2 lb breakfast sausage (I used Bob Evans Maple Flavor)
  • 4 eggs
  • 1/4 c milk and 1/2 cup milk
  • 1 can cream of chicken soup
  • 2 cups shredded cheddar cheese
  • Salt & pepper for flavor

Directions:
  1. Bring pot of water to a boil, cook noodles as directed; drain and put noodles in 9'' x 11'' greased baking pan.
  2. Preheat oven to 375.
  3. Cook sausage according to directions, drain and mix in baking pan with noodles.
  4. Scramble the eggs and 1/4 cup milk in the same pan as sausage, and mix eggs in with noodles and sausage once cooked completely.
  5. In a small saucepan, mix cream of chicken and 1/2 cup milk until heated.  Once heated, mix into the noodle mixture in baking pan.
  6. Mix in 1 cup of cheese with noodles.
  7. Top off the mac with the remaining shredded cheese and season to your liking with salt and pepper.  
  8. Bake for 15 minutes or until cheese is golden brown on top.
  9. Food coma.

Pizza Ballz Recipe


Pizza Ballz
I made these the other day and made a lot more than expected.  Whats great about this recipe is you can freeze leftovers and just microwave them when you wanna reheat!  Muy delicioso!


Ingredients:
  • 4-10 count biscuits in the can (40 biscuits total)
  • 1 package sliced pepperonis
  • 1 block of mozzarella cheese, cubed
  • 1/2 cup olive oil
  • Italian seasoning
  • Garlic powder
  • Parmesan cheese
  • Pizza sauce for dipping
Directions:
  1. Preheat oven to temperature listed on biscuits. 
  2. Grease a 9'' x 11'' baking pan.
  3. Take one biscuit at a time and flatten it out.  Put two pepperonis in the middle of the flattened biscuit and a cube of cheese on top of the pepperonis. 
  4. Fold in the sides of the biscuit over the pepperonis and cheese to form a ball. 
  5. Repeat with all of the biscuits, putting the pizza balls in the baking pan one by one until the entire pan is filled.
  6. Mix olive oil, italian seasoning, and garlic powder together in a small bowl.  Brush the mixture on top of the pizza balls.
  7. Sprinkle parmesan cheese over the balls, the more the better!
  8. Bake for 10 minutes at a time (time will vary depending on brand of biscuits used, oven temp, etc).  I checked mine every 5 to 10 minutes, they are good to go once they're golden brown.
  9. Serve with pizza sauce. 
  10. EAT UP!!
