Cheap, Easy & Still Delicious Chicken Casserole Recipe

So, us being the working poor its hard to experiment with different recipes.  Its been a while since we've been grocery shopping, so I've been trying to think of things to make with whats lurking in the back of the pantry.  This one ain't so bad, its actually delicious.

1 lb. chicken breasts cooked and diced*
1 can cream of chicken soup
1/2 cup milk
1/2 lb. spiral noodles
parmesan cheese
black pepper
garlic salt

-Preheat oven to 375.
-Cook noodles thoroughly, drain.
-Combine the noodles, chicken, milk, and cream of chicken in a casserole dish.
-Season the mixture with the black pepper, garlic salt, parsley, and oregano.
-Sprinkle the top of the casserole with parmesan cheese.
-Bake for 15 mins.

Congrat$, you just made a decent meal for next to nothin.

*For the chicken, I sauteed it in butter and seasoned with salt, pepper, and minced onion, then diced it up.

B's Drink of the Week-Dewski Brewski

It's been a while since Brandon's last drink of the week, he's been under the weather so his drink has been cough syrup.. yum... NOT.

1 1/2 oz. vodka
2 oz. sour apple pucker
1 1/2 oz. sour mix
8 oz. Mountain Dew
4 oz. beer

Mix it on up and serve over ice.

The Breast Breaded Chicken Ever Recipe

This is one of the most simple, yet delicious recipes everrrrrrrr.

1 cup flour
1 lb. chicken breasts, cut into smaller pieces
2 tbsp. butter
black pepper
cayenne pepper
garlic powder 
minced onion
olive oil

-Combine flour and spices in a shallow dish.
-Heat a skillet up over medium heat with olive oil and butter until sizzling.
-Coat each piece of chicken with flour and put into skillet.
-Cook chicken until browned and crispy on both sides and cooked thoroughly.

Creamy Beef Enchiladas Recipe with Cheesy Mexican Orzo

I never liked enchiladas growing up because my mom always made them with sour cream.  When my boyfriend asked me one day at the beginning of our relationship to make them, I knew I had to come up with something, so I decided to try to wing it and make 'em my own way... and voila!

1 lb. ground beef
1/2 of a green bell pepper, chopped
3 jalapenos, sliced (more or less to your taste)
6 giant burrito tortillas
1 can cream of chicken
1 8.75 can yellow corn, drained
1 10 oz. can enchilada sauce, plus more for drizzling
fiesta blend shredded cheese
sea salt
black pepper
minced onion
chili powder
crushed red pepper
garlic salt

-Preheat oven to 375.
-In a large skillet, brown the ground beef with the green pepper jalalpenos, and corn. 
-Once the ground beef is cooked thoroughly, mix in the enchilada sauce and cream of chicken. 
-Season the sauce with the spices listed above.
-Grease a baking pan with nonstick cooking spray.
-Fill each tortilla with the ground beef sauce, roll up, and put into the baking pan.  Once each tortilla is filled and in the pan, top them with your desired amount of shredded cheese and drizzle with enchilada sauce.  
-Bake for 20 mins.

Orzo is my absolute favorite pasta, so many ways you can make it!  Basically like rice, but better.

1/2 lb. orzo
1 can Campbell's Fiesta Nacho Cheese condensed soup
2 cups chicken broth
1 8.75 oz. can yellow corn, drained
garlic salt
minced onion
black pepper

-Mix the orzo, chicken broth, soup, and corn in a skillet.
-Season with spices and cook on low heat, covered for about 15-20 mins. 

Easy peasy!

I'm super picky so I dissected mine to avoid the jalapenos, I just use them for the flavor, lol

Oreo Crusted Sugar Cookies Recipe

This ones for you cuzzo, I'm thoroughly enjoying these especially in your honor. 

Sugar cookies are in high demand at my house, and so are Oreos, so why not kill two birds with one stone and combine the two?  Probably smartest thing I've ever done.

2 3/4 cup flour
1 tsp baking soda
1/2 tsp baking powder
1 cup (2 sticks) butter softened
1 1/2 cups sugar
1 egg
1 tsp vanilla extract
about 12 Oreo cookies

-Preheat oven to 375.
-Mix together the flour, baking soda, and baking powder. Set aside.
-In seperate bowl, beat together butter and sugar until smooth.  Mix in the egg and vanilla, then gradually beat in the dry mix.
-Crush the oreos (either by hand or in food processor) and put in a small bowl.
-Roll cookie dough into small balls, about tablespoon size, then roll into the crushed oreos.  You may have to press the oreos into the dough a little, doesn't stick as easy as I thought it would.
-Bake for 10-11 minutes.

Sketti Pie Recipe & Redneck Texas Toast

This has been a favorite of mine since my dad introduced it to me forever ago.  Since then I've lost the original recipe and decided to try to wing it and make it on my own.  Sooooo since I've been winging it, my precise measurements are anything but precise, so bear with me...

-1 lb. ground beef
-1/2 lb linguine noodles
-2 eggs
-1/2 cup parmesan cheese, divided into 1/4 cups; plus more for sprinkling
-1/2 bag shredded mozzarella cheese
-italian dressing (just enough for a few squirts)
-16 oz. tomato sauce (I used 2 cans 8 oz. each)
-1 can (14.5 oz.) diced tomatoes
-couple pinches of sugar
-minced onion
-crushed red pepper
-garlic salt
-2 tbsp. butter
-hot sauce

For Toast:
-4 pieces bread
-shredded cheese, just enough to sprinkle over the bread, any kind your heart desires
-garlic salt
-parmesan cheese

-Preheat oven to 350.
-Boil water in a pot and cook noodles as directed.
-While water is boiling and noodles are cooking, brown the ground beef in a frying pan and set aside.
-In a saucepan, pour in the tomato sauce and diced tomatoes.  Squirt a bit of Italian dressing in, 1/4 cup parmesan cheese and sprinkle with oregano, garlic salt, minced onion, parsley, crushed red pepper, and a couple big pinches of sugar.  Last but not least, shake some hot sauce into the mixture to your liking.  (Again, sorry about my oh-so-precise portions....)
-Heat sauce thoroughly on low.
- Once noodles are done, drain and rinse with cold water and let pan cool.  Put noodles back into pan, stir in rest of parmesan cheese, a squirt of Italian dressing, the 2 tbsp. of butter and the eggs.  Mix in a bit of garlic salt, oregano, and parsley.  Press the noodles down into a pie pan, forming it like a pie crust with the edges up higher.
-Mix the ground beef in with the tomato sauce masterpiece.  Scoop the sauce into the middle of the noodle crust.  You can fit almost all of it in there, but not all.
-Sprinkle the top with parmesan cheese and mozzarella cheese, just enough to cover.  Sprinkle the "crust" with some extra parmesan cheese and garlic salt.  Lastly, sprinkle the top of the pie with parsley and oregano, just a lil'.
-Bake for 35-40 minutes.

For the toast:
-For about 5 minutes, put the 4 pieces of bread on a baking sheet in the oven.  Flip the bread and repeat for the other side.
-Sprinkle the bread with cheese, parmesan cheese, garlic salt, oregano, and parsley.
-Bake for 4-5 minutes or until cheese is melted.

While eating this yummy dinner we also decided to try this crazy looking beer...
It's much better than you'd think.  If you see it, get it.

JB's Mac N' Cheese Recipe

There's nothing we love more than mac n cheese, and I mean WE LOVE IT.  This has been our favorite way to make it for quite a while now.  It's extra creamy because you use cream of chicken in it... MMMMM.  And it went really well as a side dish for our rib cook off the other night ;)

1 lb. pasta (elbow or small shells work best)
1 bag shredded mild cheddar cheese
2 cans cream of chicken
1 package (11 slices) mild cheddar cheese
1/2 cup parmesan cheese
black pepper to sprinkle to your preference
hot sauce to your liking

-Preheat oven to 375.
-Cook the pasta as directed, set aside.
-Heat up the cream of chicken in a saucepan (I like to add a little milk at this point but Brandon "doesn't make it that way")
-Once the cream of chicken is heated thoroughly, mix in with pasta.
-Put the pasta mixture into a casserole baking pan, mix in half the bag of shredded cheese, black pepper, parmesan cheese, and hot sauce.
-Top the amazing mac mixture with the rest of the shredded cheese and then the slices.
-Bake for 30 mins or until the cheese is fully melted on top.

Southwest Steak Fettuccine Recipe

For this recipe, I was inspired by my favorite dish at Applebee's, the Southwest Steak Fettuccine Alfredo.  We always like to try to make recipes that "one-up" restaurants, and lets just say this one definitely did the job.


Top sirloin steak (or whatever kind of steak your heart desires)-enough for two people
1 red pepper
1/4 cup chopped green onion
1 clove garlic minced
1/2 cup yellow corn
1/2 lb. fettuccine noodles
3 tbsp. butter
2 tbsp. olive oil plus a tit bit more to sear steak in
1 cup heavy cream (about 1 half pint carton)
1 cup milk
2 tbsp. flour
1/2 cup parmesan cheese
mozzarella cheese for topping, and to stir into alfredo sauce if you wanna
black pepper to taste
red cayenne pepper to taste
cilantro to sprinkle on top


-Chop red pepper and green onion into small pieces.  Saute in small frying pan on low heat while the rest of the meal is cookin'.
-Cut steak into small strips (its a lot easier to do this when its still slightly frozen).  Put in medium frying pan and sprinkle with olive oil, cook over low heat.  Be careful since the steak is cut into strips they will cook fast, low and slow is the way to go here!  Sprinkle steak with black pepper, cayenne pepper, and cilantro to your taste.
-Boil a pot of water and cook noodles as directed.
-melt butter in medium saucepan with olive oil over medium heat.
-Add the cream, milk, and flour. Bring mixture to a simmer, stirring often. 
-Add parmesan cheese and simmer for a few more minutes until thick and yjmmy.
-Dump the red pepper, green onion, and garlic into the alfredo sauce.  Sprinkle sauce with black pepper and cayenne pepper.
*at this point I mixed in 1/2 cup mozzarella cheese but found that the sauce got way too cheesy and stringy and had to stir in more milk to bring it back to its creaminess, which still ended up fine in the end.
-Once the noodles are done, sprinkle with some cilantro for flavor and cool green decoration :)

Make your yummy plates by making a big ol' nest of noodles, put some sauce over the noodles, make a layer of steak, then sprinkle with more sauce and top with mozzarella cheese.  EAT UP PEEPS!

Marshmallow Brownie Cupcakes with Melted Hershey Bar Icing Recipe

Probably the most amazing cupcakes ever... I made a dozen with Hershey bar icing and the other dozen with marshmallow fluff as icing.  CAN YOU SAY YUM!?!?

Yields 24 cupcakes


4 oz. chocolate chips
1 c. butter
1/2 c. mini marshmallows
1 3/4 c. sugar
1 c. flour
4 eggs
1 tsp vanilla
4 Hershey bars (if you want Hershey icing on all cupcakes)


-Preheat oven to 325.
-Melt chocolate chips and butter in saucepan on low heat.
-Meanwhile, in large bowl mix together sugar, flour, eggs, & vanilla.
-When chocolate is all melted, combine into the flour/sugar mix.  Combine well, it takes a couple minutes for the chocolate to fully mix in.
-Stir in the marshmallows with the chocolate mix.
-Fill lined cupcake tins 2/3 full with batter.  Bake 30 mins.
-When cupcakes are finished, put 2 squares of a Hershey bar on each cupcake.  Let stand a few minutes and once they are soft, spread all over top of cupcake.
-Let cool and fulfill your sweet tooth craving!

Boyfriend Cookies Recipe

  This recipe is guaranteed to make your boyfriend love you... the cookies do all the work so you don't have to ;)

Andddd believe it or not this makes 5 dozen cookies!!


1 c. softened butter
1/4 c. sugar
3/4 c. brown sugar
1 box vanilla pudding mix (about 3 1/2 oz.)
2 eggs
1 tsp vanilla
2 1/4 c. flour
1 tsp baking soda
1 c. milk chocolate chips
1 c. dark chocolate chips
1/2 c. white chocolate chips
1/2 c. M&Ms
1/2 c. Reeses Pieces


-Preheat oven to 375.
-Mix together butter and sugars.
-Add pudding mix, eggs, & vanilla into mix.
-Stir in flour and baking soda.
-Mix in all the chocolate chips and candy (try not to eat all the dough, at this point it gets hard to resist).
-Bake 10 mins. or until golden brown.
-Sit back and watch your boyfriend love you.

New Years Resolution 2013

It is our New Years resolution to turn this little blog into something big by the end of the year... Not like Rachael Ray big but big as in we have fans and followers who are here to support us! It is our goal to post one recipe a week, whether it be something we created on our own or someone else's new recipe we tried. Bear with us as we are both still super new with this stuff and know its going to take some time. Thank you all for your love and support!

BBQ Breakfast of Champions Recipe

So last night I made a giant bag of chicken in the crockpot into shredded BBQ chicken, which means that is all we're eating for the next week. I've been trying to think of new more exciting ways to use the chicken in recipes, so this morning I thought of this amazing, messy goodness.

This is basically a BBQ chicken and egg grilled cheese sandwich, but my boyfriend said it was the breakfast of champions ;)

Yields 2 giant sandwiches


-6 eggs
-milk to scramble eggs
-2 slices American cheese
-hamburger buns, hoagie buns, or whatever kind of sandwich bread your heart desires
-BBQ shredded chicken (just enough to put on your sandwiches)
-butter to slather on each bun, as you would grilled cheese


1. Scramble & cook the eggs, top with some salt and pepper and some shredded cheese if you wanna. Set aside.

2. Meanwhile while the eggs are scrambling, in a small frying pan heat up the BBQ chicken so it's nice and juicy warm.

3. Butter outside of each of the buns you are using, place one half of the bun butter side down on a griddle or frying pan, start loading it up with egg, top that with BBQ chicken, then a yummy slice of cheese. Put the other half of the bun on top of the sandwich, butter side up. Flip & brown both sides.

4. Eat up! Make sure you have a million napkins, you'll need them :)
