Cheeseburger Gnocchi Recipe

I've never had gnocchi, and to be quite honest, I have no frickin idea how to even pronounce it.  All I knew is that I wanted to make it!  #amateurchefprobs

This recipe is inspired by one I came across on Pinterest.  I figured if I don't like the gnocchi, what better way to mask the taste than with CHEESEBURGER!  I will admit, gnocchi is, um, unique.  It's got a different texture, but all-in-all it was yummy!  It's a combo of potato and pasta, and who doesn't like that!? 

This recipe was super simple, and the gnocchi being the star of the show made me feel like I was being all super-chefy. <---- Is that even a word? I'm declaring it one ;)


16 oz. package potato gnocchi
1 tbsp. butter
1/2 lb. ground beef
1 tsp. cumin
1 tsp. salt
1 tsp. pepper
1/2 tsp. paprika
1 tsp. ground mustard
1 medium onion, diced
3 cloves garlic, minced
1-10 oz. can Rotel diced tomatoes
1 c. beef broth
1 c. shredded cheddar cheese
sliced green onions for topping


-Melt butter in a large cast iron skillet over med-high head.  Add gnocchi and cook on each side for 2-3 minutes until fully toasted.  Remove gnocchi and set aside. 
-Add the onion and garlic to the skillet and cook until the onions are tender, then add the ground beef and cook til browned.
-Add the tomatoes and beef broth, then add the gnocchi back into the pan.  Stir to combine and bring to a boil.  Reduce the heat and let it simmer until the gnocchi is tender and most of the liquid is absorbed, about 5-6 minutes.
-Remove from heat, then stir in 1/2 cup of the cheddar cheese and stir til cheese is melted and combined.  Top with remaining cheese and the green onions. 
-Place the skillet in the pan and broil til the cheese is bubbly and golden brown (that's my favorite part!!)

Playing Catch Up!

Soooo it's been a while, eh?  Lots and lots and lots has happened since my last post in January...let me brief you!

First and foremost, we welcomed our newest addition to the family!!!! Miss Presley Anne <3  I cannot wait until she's old enough to cook with me :) :) :)  She's already hooked on Food Network ;)

We finally sold our first home after a year of 2 mortgages, then we partied hard to celebrate ;)

We had our first annual "Merica Tram Jam" for the 4th of July

We went to Cincinnati... I surprised my love with tickets to see the Cincinnati Reds at the Great American Ballpark (he's got a ballpark bucket list- he wants to visit every single MLB ballpark!).  We stayed for the night, had a few too many drinks, and explored the crazy Cincy life... what a city!

Finally, food.  This is a recipe blog after all, right?!

I've still been cooking.  It's gonna take a lot more than a child to get me to stop!  I've got a notebook full of recipes to post, but my problem is that I make little notes on them as I'm cooking, or don't write down the exact measurements thinking "I'll remember this when I post it on the blog..." and then I don't bother to post anything for 6 months... :( I keep telling myself I'll get better, making small goals like posting just one recipe a week, etc etc and I always put this on the back burner. 
New goal:  1 recipe every 2 weeks!
That's doable, right!?  We shall see... LOL
