Chicken Bacon Pesto Alfredo Bake Recipe



Every once in a while I try to come up with some kind of concoction with random things I have left in the fridge, and every once in a while those random concoctions turn out pretty damn good.  This happens to be one of them!  

How did I come up with this one in particular?  I had a pint of heavy cream in the fridge- what better to make with that than alfredo sauce!?  A jar of pesto sitting in the fridge unopened, a bag of bacon bits and ends from our local meat shop that needed cooked, and lots of chicken in our freezer.  Combine it all together and throw it in the oven, and voila!

INGREDIENTS:

1 lb. chicken breast, cooked and shredded
1/2 lb. pasta, cooked 
6 pieces bacon, cooked and cut into pieces 
1 14.5 oz. can diced tomatoes
2 tbsp. pesto
1 pint heavy cream
1 stick butter
1 cup grated parmesan cheese
1 tsp. parsley
Salt and Pepper to taste 
2 cups shredded mozzarella cheese 

DIRECTIONS:

-Preheat oven to 350.
-Prepare alfredo sauce; combine heavy cream, butter, and parmesan cheese in a small saucepan.  Heat on medium-low for about 10 mins then remove from heat. Sauce will thicken as it sits.
-In a 9x11 baking dish, combine pasta, chicken, bacon, tomatoes, pesto, and alfredo sauce.  Top with mozzarella cheese.
-Bake for 20-25 minutes or until cheese is melted and starting to get bubbly and brown.  Top with pretty parsley, if desired ;)

Salisbury Steak with Onion Gravy Recipe



I've always wondered what Salisbury steak was... Is it steak? Is it burger?  I've never even had it before.  What better way to try it than to make it myself!?  Heck, I'm always down for anything with caramelized onions!  This is a hubby meal all the way, he definitely approved. This also happens to be a one-pot dish... BONUS!

INGREDIENTS:

1 lb. ground beef
1/4 cup bread crumbs
1 egg
1/2 tsp. garlic powder
1/4 tsp. salt
1/2 tsp. pepper
1 tbsp. worcestershire sauce
2 tbsp. veggie oil
1 large onion, sliced
2 tbsp. flour
2 cups beef broth
2 beef bouillon cubes
Parsley and parmesan cheese for garnish (if desired)
Eggs noodles or mashed potatoes to serve with

DIRECTIONS:

-Combine beef, bread crumbs, egg, garlic powder, salt, pepper, and worcestershire sauce.  Form 4 patties.
-Heat oil in a skillet.  Place burger patties in skillet and brown on each side. Remove patties and set aside.
-Put onion slices in skillet and cook on medium-low for about 20 minutes until translucent and tender.  Add the 2 tbsp. flour to the onions and mix.  Cook about 1 minute til flour begins to brown. 
-Add the burger patties back to the skillet, then pour in the beef broth and add the bouillon cubes.  Bring to a boil, then cover and reduce heat to simmer for 15 minutes.
-Serve patties over a bed of egg noodles or mashed potatoes, and spoon the onions and gravy over the top.  Garnish with parmesan cheese and some parsley to make it look pretty. Parsley makes everything look pretty ;)

Homemade Hamburger Helper- Cheeseburger Mac Recipe


Growing up I always loved when my mom made Hamburger Helper.  I loved how simple yet delicious it always was, it never disappointed!  Now that I'm a "chef" according to my husband, making boxed Hamburger Helper is just not acceptable in his eyes... easy for him to say!  Sometimes I want a night of quick and easy dinner and dishes, ya know?  So with that being said, I decided I was gonna attempt my own "Hamburger Helper"... and the results are amazeballs! 

P.S. Did I mention this is a ONE POT DISH!?

INGREDIENTS:

16 oz. elbow noodles
1 lb. ground beef
1 tsp. olive oil
1 onion, diced
2 cloves garlic, minced
Salt and pepper
1 tsp. seasoning salt
1 tbsp. tomato paste
4 c. beef broth
1 tbsp. worcestershire sauce
2 c. shredded Monterey jack cheese
2 c. shredded cheddar cheese
Parsley for garnish
Bacon bits for topping, optional- and highly recommended ;)

DIRECTIONS:

-In a large skillet with high edges, heat the olive oil over med-high heat.  Add the onion and garlic and cook til onions are tender, about 5 minutes.  Add the ground beef, and season with salt and pepper (to taste) and seasoning salt.  Stir in the tomato paste.  Cook til ground beef is browned.
-Mix in the beef broth and worcestershire sauce and bring to a boil.  Add the pasta and reduce heat to simmer, cooking for 10-15 minutes or til pasta is tender. 
-Remove from heat and stir in both cheeses til melted, smooth, and combined thoroughly.
-Garnish with parsley and bacon bits, if desired.
